Charles Phan is cooking up a mini-empire.
This week, the owner of the Slanted Door opens Heaven's Dog in the Soma Grand condo tower, not four months after he opened the Academy Café in the new California Academy of Sciences. By the end of this quarter he will also add another Out the Door, his take-out concept, in Pacific Heights.
The current flurry of openings, which will bring Phan's San Francisco restaurant count to five, were set in motion and largely funded before the economy turned so sour. Phan expects 2009 revenue to exceed $27 million, not including Heaven's Dog and the new Out the Door.
The addition of a 5,000-square-foot commissary in the Mission in August gave Phan the ability to expand. Another help has been that landlords covered much of the build-out costs for the Academy Café and Heaven's Dog.
